Garlic Prawns recipe

Ingredients:

30 headless prawns.
3 cloves garlic, peeled.
2 tablespoons of olive oil.
3 teaspoons of butter.
1 tablespoon of brandy.
2 tablespoons of fish stock or chicken stock.
Pinch of sugar.
Pinch of salt.
¼ teaspoon of pepper.
2 tablespoons of cream.

Directions:

Devein the prawns; rinse and dry on kitchen towel. Set aside.

In a blender, purée the peeled garlic and olive oil until smooth.

In a large frying pan, heat the garlic/oil mixture, then add the butter.

Once hot, add the prawns and fry until half cooked.

Pour in the brandy and light with a match.

Once the flame has died down, add the stock and reduce to half volume.

Season with sugar, salt and pepper.

Finish by stirring in the cream.
